1. Chop the onions, garlic and tomatoes and fry in a pan until lightly browned. Then, add the tomato purée and roast for 2 minutes.
2. Allow to cool thoroughly
3. Mix the remaining ingredients together and add the onion-garlic-tomato mixture and stir together.
4. Season with salt and pepper and chill.
