1. Mix the almonds, icing sugar and cinnamon. Add 80 g egg white. Mix everything with the dough hook of the hand mixer. Then, knead into a smooth dough with your hands.
2. Roll out the dough in portions on a work surface dusted with icing sugar, about 1 cm thick. Cut out stars and place on a baking sheet lined with baking paper. Dip the cookie cutter in icing sugar every now and then.
3. Beat 30 g egg white until very stiff. Gradually add the icing sugar whilst continuing to beat. Brush the stars with it. Bake for 10-15 minutes at 150 degrees on the lowest shelf of a preheated oven.
